A perfect blend of flavourful and luscious recipes makes the Malwa cuisine one of the most popular cuisines among the gourmets. And discussing Malawa recipes would be incomplete without mentioning the sweet Malpua and the savoury Dal bafla.


Malpua is a round shaped flour pancake soaked in sugar syrup whereas dal bafla is a boiled &  baked dough ball served with spicy dal.


Here are quick and easy recipes for you to prepare these delightful dishes at home.


Malpua

The soft, round malpua can give a sugar rush to your taste buds. When paired with rabdi, it tastes delicious.


Ingredients of malpua


For malpua

  • 1 cup sugar
  • 1 cup semolina
  • 1 cup refined flour
  • 2 cups milk
  • 1/2 tsp cardamom seeds
  • Pinch of salt

For sugar saffron syrup

  • 1 cup water
  • 1 cup sugar
  • Pinch of saffron

Pancake preparation

  1. Mix sugar and milk.
  2. Add refined flour, semolina, cardamom seeds and salt in this mix and make a lump free batter.
  3. Heat ghee in a pan.
  4. Form round shaped malpuas of the batter with a spoon.
  5. Fry malpuas till its color changes to golden brown.

Sugar saffron syrup preparation

  1. Take sugar and water in a pot and boil it until it turns sticky or 1 string consistency.
  2. Take it off the flame and add a pinch of saffron to it. 

Tada! Soak the malpuas in the saffron sugar syrup and enjoy.


Dal Bafla 

The scrumptious baked dough balls soaked in dal is a flavorful rejoice. A zesty meal from Madhya Pradesh, dal bafla is much like dal bati from Rajasthan or litti chokha from Bihar.


Ingredients of dal bafla 


For bafla :

  • 2 cups wheat flour
  • 1/4 tsp ajwain (carom seeds)
  • 1/2 cup ghee
  • 1/2 cup water
  • 1/2 tsp turmeric
  • Salt to taste

For Dal :

  • 2 cups soaked arhar dal (pigeon pee) 
  • 1 medium sized onion
  • 1 medium sized tomato
  • 2 cups water
  • 1/2 tsp turmeric
  • 2 tsp oil
  • Salt to taste

For Tadka :

  • 1 tbsp ghee
  • 1/4 tsp hing (astofida)
  • 1/2 tsp mustard / cumin seeds 
  • 1 tsp red chilli powder
  • Few coriander leaves
  • 2 -3 dry red chillies


Bafla preparation

  • Take wheat flour, ajwain, turmeric, salt and ghee, add water and mix them well to make dough.
  • Make small balls from the dough.
  • Heat water in a pan, put the balls into the pan and let the balls cook till they float on the surface.
  • Take out the balls and drain the water to dry the balls.
  • Bake the balls for about 20-30 minutes either in a microwave or oven.


Dal preparation :

  • Take oil in a pressure add mustard seeds, chopped onions, tomatoes and saute well.
  • Add soaked arhar dal, water, turmeric and salt and pressure cook it.


Tadka preparation :

  • Take ghee in a pan, add cumin seeds, hing (asatofia), dry red chillies and saute.
  • At last add red chilli powder mix and pour over the cooked dal.
  • Garnish with coriander leaves.

Serve the piping hot dal poured over the bafla and dwell in the yummylicious experience.
